Lactose

Lactose is a disaccharide sugar made from galactose and glucose. Lactose is most commonly found in the milk of mammals, making up between 2 and 8% of it, depending on the specific type of milk. In fact, several million tons of lactose are produced each year as a by-product of the dairy industry. Both pure lactose and dairy by-products containing lactose have applications in the food industry. For example, lactose can be used to sweeten stout beer, which results in a beer called a “milk (or cream) stout”. Lactose is also heavily used in the pharmaceutical industry. This reagent-grade chemical can carry and stabilize aromas, and even act as a filler in pills.

Lactose, also known as “milk sugar” has many general properties and characteristics that make it desirable in the food and pharmaceutical industries. For example, lactose is highly available, compatible with other ingredients, physically and chemically stable, and water soluble. It is also a very cost effective chemical to use.
