Lactose is a disaccharide sugar made from galactose and glucose. Lactose is most commonly found in the milk of mammals, making up between 2 and 8% of it, depending on the specific type of milk. In fact, several million tons of lactose are produced each year as a by-product of the dairy industry. Both pure lactose and dairy by-products containing lactose have applications in the food industry. For example, lactose can be used to sweeten stout beer, which results in a beer called a “milk (or cream) stout”. Lactose is also heavily used in the pharmaceutical industry.
